Beauty Food: Creamy Coconut Fudge
A creamy dreamy snack...a refreshing indulgence on warm summer days.
Just wow! This brilliantly simple recipe has become one of my favourite desserts in no time. Best of all, it’s free of sugar, dairy and gluten – three typical ingredients that can fuel inflammatory reactions in the body and damage your skin. Instead, with Coconut Fudge you get a concentrated load of healthy proteins and omega-3 acids from hemp seeds. An all-round healthy treat!
- 200g coconut milk (full-fat and without additives)
- 100g nut butter (I prefer light almond; cashew or peanut work too)
- 50g plant-based protein powder (if you use an unsweetened protein powder, you can sweeten the fudge with a liquid sweetener of your choice, like maple syrup or honey)
- pinch of salt
- toppings: hemp hearts and freshly roasted coconut flakes
Put coconut milk, nut butter, protein powder* and salt in a blender & mix until you get a super soft, smooth cream. Roast the coconut flakes in a pan until golden.
Tip: Add a pinch of salt to make the coconut taste even more intense.
Pour the fudge cream into a mold, sprinkle with the toppings and freeze for an hour, or until set. Using a hot knife, cut into pieces. Enjoy!
This fudge tastes best when slighty thawed. So let the pieces set at room temperature for some minutes before eating.
Experience has shown that it stays fresh for a few days in an airtight container in the refrigerator, but most of the time it runs out too quickly, if you know what I mean…
If you want to store it for longer, use the freezer & thawed whenever you need a sweet, delicious & nourishing little treat.
